Default Understanding the Evolution of Procurement

I am researching Procurement and would like to ask for help in understanding the differences between certain Purchasing/Procurement Departments. I have been informed that the evolution of a procurement department may be seperated into 5 stages; Buying, Sourcing, Supplier Management, Category Management and Procurement (from basic operations to strategic).

What are the fundamental differences between these stages, what activites do they do and how does this affect their contribution to the direction or strategy of an organisation?
